Pear mustard salad dressing

Andre and I have been trying to eat healthier lately.  We already cut out all fast food and most processed foods.  I cook at home most days and always from scratch.  We are trying to eat more veggies and we started with adding salad to our diet.  We have been getting the 1 pound box of mixed greens from Costco and have it for dinner or bring it to work for lunch.  Andre makes a delicious balsamic vinaigrette dressing for the salad, which is simple and delicious.

However, I wanted to mix it up a bit and try something different.  This last time at Costco, we bought a big box of Bartlett pears which are delicious to eat.  I had a great idea to put some in our salad today.  I have been developing a taste for adding fruit to my salads after that Kale Waldorf Salad I made with apple.  I thought pears would be the perfect addition to our mixed greens.  I made some tender chicken breasts the other day and had some leftover so I threw the remaining chicken in the salad as well.

Inspired by the Kale Waldorf Salad, I added chopped pears to the dressing.  It came out incredible!  I cannot believe how easy and delicious this pear dressing came out!  Adding fruit to a salad is pretty easy and adding the fruit to make the dressing will definitely make the flavors come together beautifully.  I will definitely be making this dressing in the future.  It is a great alternative to the balsamic vinaigrette dressing.

Pear Mustard Salad Dressing

Serves: Makes ½ cup
 

Ingredients
  • ½ ripe Bartlett pear, chopped
  • 2 tablespoons Dijon mustard
  • 1 tablespoon red wine vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon brown sugar or honey
  • Salt and pepper to taste

Instructions
  1. Puree all ingredients in a blender or hand mixer.
  2. Add to salad and toss until salad is completely covered.
