We went camping with our friends in Laie in the North Shore this weekend. It was really nice to get out of town and get in touch with nature. We camped at Friends of Malaekahana, where you can rent cabins, grass shacks, or campsites. Our group rented a campsite, so we all brought our tents and enjoyed sleeping in nature’s elements.
I cannot believe that it is May already. Where has the time gone? It seems to fly by the older I get. May is a nice month because there are lots of happy occasions:
- May 1 in some parts of the world is May Day. In Hawaii, it’s Lei Day!
- May 5 is Cinco de Mayo
- May 8 this year and every second Sunday of May is Mother’s Day.
- May 30 and the last Monday of the month is Memorial Day, which means a three-day weekend!
Since today is Cinco de Mayo, what better way to celebrate than with a tasty shrimp quesadilla. (Also, the first week of May marks Andre and my 4-year anniversary together! Seriously, where has the time gone?)
So the catch of the week was a three pound ‘Omilu (or Trevally). We brought the fish to our friend’s house where we prepared it two ways. (more…)
